Creamy Pumpkin & Mushroom Pasta
INGREDIENTS:
1 cup Briati Grated Parmesan Cheese
1 lb Uncooked pasta of your choice
¼ cup Olive oil
1 Large onion, chopped
1 lb Mushrooms, sliced
1 ½ cup Chicken stock
1 can 15 oz Pumpkin puree
1 cup Half & Half or cream
2 tbsp Parsley, chopped
1 tbsp Oregano, chopped
3 Garlic cloves, minced
Salt and pepper to taste
INSTRUCTIONS:
Cook pasta according to the package instructions.
Meanwhile, sauteé the onion in olive oil, on medium heat for 7-10 minutes, until softened.
Add mushrooms and cook for another 7-10 minutes. Add garlic, stir, and cook for 1 minute.
Add the chicken stock and pumpkin puree, cook for 10 minutes on medium-low heat.
Add Briati Grated Parmesan, cream, parsley, oregano, salt and pepper. Stir and bring to gentle simmer.
Turn off heat, add cooked pasta, and stir. Garnish with Briati Grated Parmesan and herbs. Serve immediately.
